Premium Bianco
Tenuta Ulisse
This wine is made from a blend of five indigenous white grape varieties from Abruzzo: Bombino Bianco, Trebbiano d’Abruzzo, Cococciola, Passerina, and Pecorino, each contributing approximately 20%. Unlike most white wines on the market, this wine is quickly cooled to –5 °C using the estate-exclusive "Ulisse cold tunnel," followed by a low-temperature cold maceration (criomacerazione) for 12–24 hours, fully extracting the fruit skin and floral aromas; it is then gently pressed in an inert environment and fermented slowly in temperature-controlled stainless steel tanks at 8–11 °C. The wine is aged on the lees (sur lie) for about 3 months without stirring, preserving its vibrant acidity and delicate mineral character. In the high-altitude vineyards (approximately 900–1,000 meters) at the foothills of Crecchio in the Abruzzo region of Italy, limestone clay and gravel interweave, providing good drainage and mineral richness; the cool breezes from the Adriatic Sea blow year-round, combined with the shielding effect of the Apennines, creating a growing environment with significant day-night temperature differences and excellent ventilation. This allows the grapes to accumulate pure aromas and crisp acidity. The manual harvest is completed in the early morning in mid-September to ensure optimal ripeness and aroma retention. The alcohol content is 13% vol.
